Why it is on the list
Hayato has held two Michelin stars in every California selection from 2021 to 2026.1 Brandon Hayato Go, its chef and owner, opened it in 2018 and cooks a traditional kaiseki dinner of many courses.2 The counter is the whole restaurant: seven seats and one seating a night, so every guest sits in front of the chef for the full meal.2
It is the wrong table for a party of more than seven, or for a room of your own; for that, the private cellar room at Somni is the one to ask for.
How to get it
Book a seat through Hayato's page on Tock; reservations are required.2 There is one seating an evening, at 6:30 pm, for seven guests, so ask for the number of seats you need on a single date and arrive on time.2 Hayato is at 1320 E 7th St, Suite 126, in the ROW DTLA district.32

With seven seats and a single seating, the room holds only that evening's seven guests from start to finish.2
