Why it is on the list

Providence holds three Michelin stars in the 2025 and 2026 California guides, after two stars in every California guide from 2019 to 2024.¹ With Somni it was one of the first two restaurants in Greater Los Angeles given three stars.² Michael Cimarusti cooks only wild-caught, sustainable seafood, mostly from American waters, and co-owner Donato Poto runs the room.³ Dinner is a classic tasting menu or a longer chef's tasting menu, with oysters, caviar and Santa Barbara spot prawns to add.⁴ The dining room was redesigned in 2023 in blues, greens and sand tones, with walnut tables and a walnut bar under hand-blown silvered glass globes.²

It is the wrong table for gluten-free, dairy-free or vegan diets, which the kitchen cannot always meet.⁴ For a room of your own, take the private cellar room at Somni, the other restaurant in Los Angeles first given three stars.²

How to get it

Book by calling (323) 460-4170 or on OpenTable; the book opens two months ahead, and email is not taken for bookings or cancellations.⁵ Name any dietary restrictions when booking.⁵ A credit card holds the table; cancel at least 7 days ahead, or pay $375 a person, same-day bookings included.⁵ The classic tasting menu is $375 and the chef's tasting menu $495, before tax and gratuity, with wine and zero-proof pairings.⁴ Seatings run from 5:45 pm Tuesday to Thursday and from 5:30 pm on Friday and Saturday, the last at 9:15 pm; closed Sunday and Monday.⁶

Discretion

The dress code is business casual.² Bookings go through the telephone line or OpenTable only, never by email.⁵ The restaurant sits on Melrose Avenue in Hollywood and serves dinner only, Tuesday to Saturday.⁶
