Why it is on the list
Den has held two Michelin stars in every Tokyo guide from 2021 to 2026.1 Zaiyu Hasegawa owns it and cooks it. He builds each night's meal from the produce that arrives that day, and he calls it home cooking.2 Dinner runs from 18:00 to 20:00, and the restaurant closes on Sundays and on dates it posts each month.34
It is the wrong table for more than four: the book stops at four.4 For a larger party or a room of your own, take the Versailles salon at Joël Robuchon, the private salon at L'Osier or the private room at Sazenka.
How to get it
Call +81-3-6455-5433 yourself, between 12:00 and 17:00, Monday to Saturday.4 The book opens two months ahead to the day: for 15 March, call from noon on 15 January.4 Den takes no online bookings and none made through agencies or other third parties, and a booking holds only once its confirmation email arrives.4 The line is often busy at opening; call again a little later.3 Give every allergy and dietary need when you book; not every request can be met.4
Changes and cancellations must be made at least two days ahead, and for a Monday by the Saturday before. Cancelling on the day, or arriving with fewer guests, is charged the full set price.4
Discretion
The restaurant is inside the Architect house hall JIA, and its door is on Gaiennishi-dori, a ten-minute walk from Gaienmae station on the Ginza Line.2 Bookings are taken only from the diner, by telephone, so an assistant or a concierge cannot hold a table on your behalf.4
