Why it is on the list

FZN holds three Michelin stars in the 2025 Dubai guide, the current selection, given in its first year in the guide.¹ It won them within months of opening, and is the third of Björn Frantzén's restaurants to hold three, after Frantzén in Stockholm and Zén in Singapore.² Executive chef Torsten Vildgaard, who spent more than ten years at Noma, cooks a single set menu of about nine courses built on Nordic produce such as Norwegian king crab and langoustines, with herbs, dairy, vegetables and flowers grown locally.³² The 27 seats face an open kitchen, and the list runs to over 1,200 wines, with wine, non-alcoholic or mixed pairings.³

It is the wrong table for anyone who wants to choose from a menu, or who wants a room to themselves: the menu is fixed and the 27 seats share one room.² For Indian cooking at the same level, take Trèsind Studio, the other three-star kitchen in Dubai; for a table set apart, the Heritage Room at 11 Woodfire.¹

How to get it

Book online through the restaurant's own site or its SevenRooms page.³² Tables for the coming month are released on the 1st of each month at 10 a.m.; the room holds 27, so book on the day the month opens.³ The menu is set; the drinks are a wine pairing, a non-alcoholic pairing, a mix of both, or wine by the glass.³

Discretion

Guests come in through a gold-lined hallway at Atlantis The Palm and take a lift up to a living room laid out like an apartment, where the evening starts and ends, with a terrace over the Dubai skyline.³² The dining room itself is open, with every seat facing the kitchen.²
