Why it is on the list

Verso holds two Michelin stars in the 2025 and 2026 Italian selections. The guide gave it both at once in November 2023, ten months after it opened, and confirmed them in November 2024.¹² The brothers Remo and Mario Capitaneo, from Puglia, cooked with Andrea Berton, Carlo Cracco and Enrico Crippa, and worked with Enrico Bartolini from 2010, including the year his Milan kitchen returned to three stars.² The restaurant has no wall between the room and the kitchen. It is built around three chef's tables that face the stoves, and you watch the brigade at work from your seat.³⁴

It is the wrong choice for a private conversation or a closed group. For that, take the private dining room at Andrea Aprea. For two people who want the kitchen to themselves, take the kitchen table at Berton.

How to get it

Call +39 02 8975 0929 or write to info@ristoranteverso.com and ask for places at a chef's table.⁵ Verso serves lunch from 12:30 to 14:00 and dinner from 19:30 to 22:00. It is closed on Tuesdays and Wednesdays.⁵ The tasting menu is EUR 220 a guest, or EUR 270 with two added courses chosen by the chefs. The whole table takes the same tasting menu, and the wine pairing is EUR 140 or EUR 160. An à la carte menu is also served.⁶

Discretion

The counters face the working kitchen with no barrier, and the cooks talk with the guests as they work. The chef's table is a place to be seen and spoken to, not a private room.³⁴
