The private counter at Hōseki

Why it is on the list

Hōseki has seventeen seats at two counters, and either counter, or both, can be reserved for one party.¹ Masahiro Sugiyama is a sixth-generation sushi chef from Tokyo, trained at Sushi Kanesaka, who cooks Edomae omakase and orders from his producers in Japan each morning.¹ He sets the courses by who is at the counter, so the meal changes with the guests and the day's fish.¹ The restaurant has held one Michelin star in every Dubai guide since the first, in 2022.² The room faces the Dubai skyline.¹

It is a counter, not a table: everyone sits in a row facing the chef. For three Michelin stars, book Trèsind Studio or FZN by Björn Frantzén; for Italian, Il Ristorante – Niko Romito, two stars, is in the same resort.²

How to get it

Book through the resort's dining reservations on +971 4 777 5433 or dine.dubai@bulgarihotels.com and ask to reserve one of Hōseki's two counters privately, or both for the whole room.¹ Reservations are required.¹ Dinner has two sittings, at 6 pm and 8:30 pm, Wednesday to Sunday; lunch is at 1 pm, Thursday to Sunday.¹ There is a separate private dining menu; ask for it when you book.¹

Discretion

The resort sits on Jumeira Bay Island, reached by car or by boat, with secured parking and the resort's own limousine.³ Guests enter Hōseki through a tokonoma, an entry room, on the fourth floor.¹ Booked privately, the counter holds your party alone.¹
