Why it is on the list
STAY has held two Michelin stars in every Dubai guide since the first in 2022, and holds two in the 2025 guide, the current selection.1 The kitchen cooks French food under Yannick Alléno, served as two fixed menus that change with the seasons: "Émotions" in four courses and "Expérience" in six.2 Dessert comes from the pastry library, the part of the restaurant most associated with it.2
It is a dining room, not a room of your own. For a table set apart from the other guests, take the Heritage Room at 11 Woodfire; for three Michelin stars, take FZN by Björn Frantzén or Trèsind Studio, both on the Palm.1
How to get it
Book a table through the restaurant's reservation page, or call One&Only The Palm on +971 4 440 1010.2 STAY opens Tuesday to Sunday from 6:30 PM, with last orders at 10:15 PM; it is closed on Mondays.2 Choose between the four-course and the six-course menu.2 A dress code applies.2
Discretion
STAY is inside the One&Only The Palm resort on Crescent Road (West), so guests arrive through the resort rather than from the street.2 It serves dinner only, from 6:30 PM, and a dress code applies.2
